In this study, we present optimal results about extraction conditions of total phenolic and total flavonoid from gynostemma pentaphyllum use Response Surface Methdology. Experimental layout according to Box - Benhken design, An optimal model has been formulated to extract total phenolic content (TPC) Y1 and total flavonoid content (TFC) Y2 with three factors: temperature extraction (X1), time extraction (X2) and concentration ethanol (X3). Folow this model, the optimal conditions for extraction process to obtain the highest content of polyphenol compounds at temperature of 61oC, time of 175 mins and concentration ethanol of 56%.
