In this research, we conducted a survey of components and analyzed the content of fatty acids, tocopherol, triglycerides and phytosterols in coixseed oil and millet in the rice family. The most typical unsaturated fatty acid compounds are linoleic acid and oleic acid. The content of these fatty acids is specifically determined by gas chromatography-mass spectrometry (GC-MS). The content of tocopherol, phytoserol, triacylglycerol wasdetermined by high performance liquid chromatography (HPLC).
